Food Product Sustainability Rating in USA
In supermarkets in the USA, customers can now use a type of rating to determine just how sustainable the food is that there are purchasing.
This is important as it is now well recognised that people want to do the right thing by the environment and therefore would prefer to purchase food and other items that are more “green”.
The HowGood rating uses up to 70 factors to determine a four step rating system that goes from None to Great. There is a tag that comes with the rating which shows the rating in globes to make it easy for customers to see how sustainable each food is.
To date over 100,000 products have been rated based on sustainability, freshness and local sourcing.
This isn’t the only Sustainability related rating system that is now out there. Sustainability is a complex issue and so a rating system with a clear result makes it much easier for people to understand. Like the Heart Foundation Tick, it takes time for people to understand what the symbol / rating means and eventually it makes the products it is on seem much more credible.
It is also important to remember that each rating type is specific to it’s market. Like the HowGood rating is specifically for consumers of supermarket product.Ratings are only as good as the information used to determine them, so it is important that each rating system be carefully tested before it is used commercially or publicly, so that Greenwashing is not done.
Whether a product is “Green” is not the only factor influencing the purchase decision but it is certainly becoming more important. It is only a matter of time before a similar rating is in use within Australia.

Breakfast needs protein
The traditional English Breakfast has always been eggs, sausages, bacon, toast and maybe mushrooms or other additions.
A recent study has found that this high protein breakfast is particularly good for women and reduces the amount of food eaten later in the day. Maybe this is a case of the research finally confirming what has obviously been known for years. It also shows what has long been stated that it is not good to miss or skip breakfast as it does influence appetite for the rest of the day.
“Acute Satiety Effects of Sausage/Egg-based Convenience Breakfast Meals in Premenopausal Women”, is the name of the research and it was presented at The Obesity Society’s annual scientific meeting in Atlanta on 14 November 2013. It was a joint effort by Biofortis Clinical Research, Chicago, a division of Merieux NutriSciences, and the University of Missouri’s Department of Exercise Physiology and Nutrition, Columbia
The research involved presenting each of the 18-55 year old women with a bowl of different types of breakfast food, each containing approximately 300 calories. The egg and meat breakfasts contained up to 39 grams of protein.
Each participant was given a questionnaire before breakfast and then at 30 minute intervals until lunch. The questions related to appetite, including fullness, feeling of hunger and desire to eat. At lunch tortellini and tomato based sauce was served and the participants were allowed to eat until comfortably full.
Those that had eaten the high protein breakfast had a lower appetite and ate less of the lunch than those that hadn’t or had not eaten any breakfast at all.
Kevin C. Maki, Principal Investigator of the study and a research scientist with Biofortis Clinical Research said; “Eating a breakfast rich in protein significantly improves appetite control and may help women to avoid overeating later in the day.”
There is a growth in the quick breakfast market with several drinkable breakfasts now available on our supermarket shelves. The findings of this research will probably change the formulations of these and any other brands wanting to come into this market.
It should also be of great interest to the diet industry, as it shows that breakfast should include a reasonable amount of protein to help achieve the diet goals and that skipping that meal is something that should not be encouraged.
So from now on, we probably shouldn’t feel guilty about a small serve of a traditional English Breakfast.

Course Description
You will be provided with a series of presentations and a quizzes, make sure you are completely comfortable with the presentation content before attempting the quiz, you may view them as many times as you feel necessary. You are required to achieve a grade of 100% for each of the four quizzes in this course and you are allowed up to five attempts for each quiz.
After you complete the on-line quizzes you must also complete and return the Third Party Workplace Report and the Enrolment Form. These forms are part of the overall assessment. These forms are found on the course page and can be downloaded and printed from there.
It is a requirement that you are able to demonstrate the application of the skills you have gained from the on-line course in a practical way in a commercial kitchen. This is called the Third Party Workplace Report.
This ‘Third Party’ can be anyone you are working alongside providing they are in the position to make valid comments on your performance. This means they should have at least 2 years experience in food service and preparation, or be a supervisor/team leader/manager of a food establishment or hold a food safety qualification.
If you are not currently working within the industry and do not have immediate access to an operational commercial kitchen then you may be able to volunteer for one or two shifts at another workplace to complete this component. Simply ask around in your local area. It could be a café, bar, restaurant, bakery or deli etc.
Alternatively, if you have worked in a food business previously, then perhaps you could contact your previous employer or a suitable work colleague whom can complete the form for you based on past observations.
The Enrolment Form provides the information that we, as an RTO, are required by the government to collect from our students for AVETMISS reporting. (The Australia Vocational Education and Training Management Information Statistical Standard) Your initial registration does not collect this information.
You will also need to provide a USI number on this form. Any person undertaking Nationally Recognised training will need to provide their USI to their registered training provider before they can receive their training records and results. You will continue to use your USI for any future nationally recognised training you undertake.
This is a ‘student number’ that is generated and given to you by the Government.
You can apply for one by going to www.usi.gov.au and simply clicking the ‘CREATE YOUR USI’ tab. It only takes a few minutes.

You can save your progress at anytime during the course, you do not need to complete it in one session. The course is broken up into a series of modules, each covering a seperate topic with each module consisting of a presentation and a quiz. You may view the presentations at your own pace and as many times as you wish. If you leave during a presentation you have the option of resuming where you left off. You may also save the questions you have completed for each without submitting them if you wish to complete the quiz at a later time.

Food Safety Supervisor Re-certification for NSW Residents
Do you live in NSW? Do you have a Food Safety Supervisor certificate that need re-certification? Then this is the course for you!
Food Safety Supervisor certificates expire five years from the date of issue, with the first round due to expire from the 1st of September 2015.
Should your Food Safety Supervisor certificate be close to expiring and you wish to continue to be the Food Safety Supervisor for a hospitality or retail food business, you will need to undertake recertification training with a Registered Training Organisation (such as Food Safety Australia) approved under the Food Safety Supervisor Program.
Food businesses have 30 working days from the date printed on the certificate to ensure their appointed Food Safety Supervisor renews their training and obtains a new FSS certificate.
This new certification will include training in three key focus areas – cleaning and sanitising, safe egg handling and allergen management.
You will need to provide us with a copy of the NSW Food Authority Certificate that you currently hold.
The FSS recertification training ensures an individual has knowledge of food safety requirements, the skills to manage food safety risks in the workplace, and can meet the essential units of competency. The training cycle of five years supports a highly skilled and compliant hospitality and retail food sector in NSW.

The Hospitality Industry

Course Description
This course has been designed to help you develop the skills and knowledge required to achieve competence in food safety. Each module of the food safety supervisor course will help you to achieve one of the required elements of competence. You will be provided with a series of presentations and a quizzes, make sure you are completely comfortable with the presentation content before attempting the quiz, you may view them as many times as you feel necessary. We also provide a PDF of student notes, which you can print out for ready reference whilst completing the course.
You are required to achieve a grade of 100% for each of the nine quizzes in this course and you are allowed up to five attempts for each quiz. After you complete the on-line quizzes you must also complete and return the Enrolment Form, Supervisor Validation form and Workplace Assignment. These forms are part of the overall assessment. It is a requirement that you are able to demonstrate the application of the skills you have gained from the on-line course in a practical way in a commercial kitchen. You will also need to provide us with a copy of your NSW Food Authority certificate that you currently hold.
Important: The last component of this online course, will require that you have access to a food workplace (either as an employee or a volunteer). This food workplace should:
- An operational commercial food preparation area, bar or kitchen with the fixtures, large and small equipment and workplace documentation defined in the Assessment ; can be a real industry workplace simulated industry environment such as a training kitchen servicing customers
- Have real food ingredients and food items
- Be fully equipped for food preparation (eg. a commercial kitchen, catering production line or food preparation area of a food outlet)
The NSW Food Authority has a requirement for a certificate to be issued in the New South Wales Food Authority format.
The Food Safety Supervisor certificate is issued by ‘an approved Registered Training Organisation (RTO)’ in addition to the Statement of Attainment after successful completion of the training requirements.
An FSS certificate states that the person it is issued to is qualified to be a Food Safety Supervisor. We, the RTO will issue the Food Safety Supervisor course certificates and cannot charge more than $30 for these, as approved by the NSW Food Authority. The FSS certificate is valid for five years from the date of issue.

Owners of registered food businesses must ensure those who handle food within their business handle foods safely. To ensure this happens, the owner must nominate a Food Safety Supervisor, who has the responsibility of recognising, preventing and alleviating the hazards associated with food handling in your workplace.
In many states, businesses that do not yet have a Food Safety Supervisor are risking a fine, and should comply with this requirement as soon as possible to avoid substantial penalties.

When will I receive my NSW Food Authority Certificate? (NSW Residents Only)
NSW Food Authority Certificates will be posted to you by registered mail within 2-5 days of processing your application, following successful completion of the course. Please Note. Any unclaimed certificates that have been returned to us by Australia Post are available to be re-sent to you however a processing fee of $16.50 will apply.
What score do I need to pass the course?
You need to get a mark of 100% for each quiz to pass this course.
Is the Food Safety Supervisor recognised across Australia?
Yes it is, the units are from a Nationally Recognised Training package.
How long does it take to complete the course?
This course will normally be completed in 6 to 8 hours. Because this is an online course the length of time may vary depending on your skill level, your previous experience and your level of computer literacy.
How long will my enrolment last?
Your enrolment in the course will remain active for a period of 12 months. After this time you will no longer be able to access the course. Re-activation after this time will incur a fee of $25 + GST.
How do I log into the course?
